L-cysteine hydrochloride is a thiol-containing non-essential amino acid that is oxidized to form cystine. It contains a L-cysteinium.

This non-essential proteinogenic amino acid is commonly used in chemical reactions, it has a role as an EC 4.3.1.3 (histidine ammonia-lyase) inhibitor, a flour treatment agent and a human metabolite.

Food Industry Applications: In clinical nutrition, L-Cysteine is used as an antioxidant agent for natural fruit juice products. It may also be used as an additive to amino acid injections to meet essential nutritional requirements in intravenous total parenteral nutrition. It is used to prolong the shelf-life of commercial products such as bread.
